         I am seeing the reasoning for the vinegar.
  I like steaming a large pot of freash spinach, add a little vinegar, and
 3 or 4 patties of butter. A great flavor, and killer source of natural iron.

Glad that You had a great Thanksgiving in Arkansas,,, I just got off the phone with my brother Steve, and yes, we will be jamming again next year with all of the cousins at Thanksgiving too... it was obviously a lot of fun for all. Steve said to say Hi, and I gave him a link to this Forum and this thread too.

.... And yes vinegar does nice things to food, but I didn't ever think about the "benefits"... very cool.

I will try my best to make it to nexts year's jam session.  How I miss the family ... and I miss that Italian filling and the mushrooms too!!  (now those are some great recipes we could spread around).

       I think I'm gonna cook a duck again W/oyster dressing If the starter on my beater,old heap,T-bird
 will fire up the beast and get me to the store and back.
     It will be just me, the duck, and my puppy.
   Pray my car starts..if you will...... Ermm

         Well, the car started and I got my duck.
  Haven't had one since last Thanksgiving and I am really looking forward to this meal.
     I even got a haircut..so I no longer look like Bernie
 Madoff.

         Yesterday, I went out to purchase a couple of
 ducks for Thanksgiving dinner. To my dismay, I had a real hard time finding a store that carried ducks.
     The first rule of merchandizing is this:
  "You can't sell anything from an empty cart."
   I found a store that understands this rule, but it
 took 3 stores and much driving. It's just me and the Puppy again this year. I like it like that. I get to eat
 anytime I want, and I get all the leftovers !Big%20smile
      I will cook one duck Thursday and one in a week or so. I try and make Thanksgiving last for a couple of weeks. Clown
        I hope everyone in this Village has a great meal
 and good time on this holiday. It's a great time of
 year to pigout on some great food goodies !
   Forget the diets, and GO NUTS !!!!
          A side note:
   I always make oyster dressing with a duck, and
 I was watching a show on the food channel where
 they were making oyster dressing in New Orleans.
   I am beginning to think it is a French custom to
 include oysters in making dressing. I wasn't aware
 of that before seeing that show. My Mom got
 the idea from Gormet Magazine way back in the
 late fifties or early sixties. I learn something
 new every day. The Flavor and aroma of that
 dressing is very special to me. That, and duck
 gravy is just over-the-top !!!!!TongueTongueTongueTongue

Yesterday, Mom and I got a 24 pound organic... no hormone... frozen turkey for next week. We'll have a lot of leftovers. We are fortunate to have a freezer.

I'm not sure yet what we will make to go along with it.   Simple, probably... baked yams... a vegetable dish of some kind and fruit. I'm looking forward to sausage/rice/celery/nuts & berries mixed with turkey broth too.

         I have a cornish hen to cook, or I might
 go to a local resturant and get their Turkey day
 special meal. I had to put my little puppy dog down
 a while ago, and I  have been a little depressed.
     I might get inspired to cook this weekend instead
 of Thanksgiving day. I have a craving for a duck like
 I made last year. It was wonderfull.
        I hope everybody has a great meal, and get to
 spend time with friends and Family !Smile

I'm very sorry about your doggie Toad! I'm sure you miss your little friend. I too am without one of my kitties this year. I understand your feelings.

I've done the eat out thing too in the past. It's actually a nice change sometimes.

You're a chef at heart though, so I hope you have some fun in the kitchen... not necessarily dancing naked in the kitchen, like I seem to remember in a previous thread ... but at least making something good.

Let me know what you whip up.

We're going with turkey, yams, sausage/chestnut/rice stuffing/mixed vegetables/a salad/an a sliver of pumpkin and pecan pie.

Mom and I are getting into the whole event, but Mom's looking at an upcoming surgery, possibly before the year is out, and the prospect of that is underlying our festive mood, even though we do a pretty stellar job of enjoying the now.

Have a good Thanksgiving... and let me know what you're making.

We have 2 ovens... one is a convection and the other is a regular. Has anyone else noticed that you can't really cook a good baked potato in a convection oven? For large fluffy baked russet potatoes... 40 minutes at 490 in a regular oven does the trick for me.

How do you roast your turkey? Convection... or regular oven???
